If you'd like, add a little bit shredded mozzarella cheese, cheddar cheese, or other shredded cheese on top before baking.

- black beans rinsed
- lean ground turkey
- frozen cauliflower rice
- tomato paste
- onion
- extra virgin olive oil
- Worcestershire sauce
- garlic powder

Instructions

- Step 1: Preheat oven to three hundred and fifty degrees. Dice onions and combine with extra virgin olive oil in large skillet over medium heat. Cook until onions are caramelized, about five minutes.

Step 2: Rinse black beans under cool running water until the water runs clear. Then in a large bowl, combine black beans, turkey ground meat, frozen cauliflower rice, tomato paste, Worcestershire sauce and garlic powder. And add the caramelized onions as well. Making the stuffing mixture for the peppers.

- Step 3: Rinse bell peppers with cool water and dry. Cut the stem off of each pepper and slice peppers in half. Remove the seeds.

- Step 4: Put a small amount of extra virgin olive oil in baking dish. Then, using a spoon, put turkey mixture into the hollowed-out peppers. If you would like, sprinkle some cheese on top of the pepper mixture. Set them inside of baking dish. Bake uncovered in the oven for twenty minutes.
Hint: Placing the stuffed peppers close to one another in baking dish helps the ingredients from dumping out.
Substitutions
There are different ways that a stuffed bell pepper can be prepared. Here are a couple of substitutions you or your family may prefer.
- Meat - rather than using ground turkey, you could substitute it with ground beef or ground chicken.
- Rice - use brown rice or white rice in place of cauliflower rice.

- Spicy - if you prefer to have a kick to your peppers, try adding some red pepper flakes.
