Easy sauteed asparagus with mushrooms and onion makes a great side dish to go along with your easy weeknight dinner. It is my favorite way to cook asparagus that includes fresh mushrooms red onion and extra virgin olive oil. These four ingredients make such a delicious side dish that you will be wanting to make again and again. Especially for the vegetable lover.

This side dish is wonderful recipe year-round. But I like to cook it especially during the spring and summer months. But don't count out the fall season also. Really the best time is anytime. And it is such a great way to get in a few wonderful vegetables. If you have a family member that may not like raw veggies, this recipe is a great one to try.

Instructions to Make Sauteed Asparagus with Mushrooms and Onion!
Step 1: First, cut off one and a half inches from the bottom of the stems of each asparagus. And dice the purple onion into chunk sizes.
Step 2: Second, under cool running water, rinse asparagus and mushrooms.

- Seasoning - add some black pepper, kosher salt or garlic powder.
- More veggies - if you like a lot of veggies, consider adding green onions or pieces of bell pepper.
- Topping - Consider topping off your onion, asparagus mushroom saute with parmesan cheese.

My best frugal tip for this recipe is to shop around for the best price on asparagus. You can check out weekly ads online or in the paper ads. When I made this recipe, this is what I found. One grocery store had them for $4.99 a pound and another close by had them for $1.49 a pound.

Yes, you can saute mushrooms and asparagus together. I have found that it is a little easier to sautee the asparagus first until it is starting to soften. Then I add the mushrooms in with them, giving it a big stir. I use extra virgin olive oil with all of it as well.
I have found that it is best to saute the mushrooms first. Let them brown a little and then add the onion. This can help the onions to not overcook.

- 1 pound fresh asparagus
- 2 tablespoon extra virgin olive oil
- 1 cup chopped purple onion
- 8 oz fresh sliced mushrooms
Instructions

- Pour one tablespoon of extra virgin olive oil into large skillet. Being sure to cover all of it.
- In a single layer, place the fresh asparagus spears into the skillet. Cook over medium-high heat for about eight minutes. They should be starting to soften up.
- To be sure to help prevent burning, turn down the heat a little bit. Carefully pour a half a tablespoon of extra virgin olive oil into the skillet and add the mushrooms.
- Stir them with the asparagus about every minute for five minutes. The mushrooms should be browning.
- Now it is time to add the rest of the ingredients. Pouring the remaining extra virgin olive oil and the onion.
- Stir all together and mixing every minute. After about five minutes all of the veggies should be soft.
- Remove from heat and serve.
