Ingredients
For these easy pumpkin bars I use canned pumpkin puree, not pumpkin pie filling.
Pumpkin bars
- canned pumpkin puree
- all-purpose flour
- sugar
- eggs
- vanilla extract
- extra virgin olive oil
- baking powder
- salt
Buttercream icing
- milk
- melted butter
- powdered sugar

Instructions
- Step 1: In a large bowl, combine all of the ingredients for the pumpkin bars. Using a hand mixer on low speed, combine the pumpkin mixture until smooth.
- Step 2: Pour half a cup serving of the pumpkin bar batter into each opening in loaf tin. Bake in oven for about twenty-five minutes. Check the center of each with a toothpick or fork for doneness. When it comes out clean, they are done.
- Step 3: In a small bowl, mix all of the icing ingredients together. With the hand mixer on low speed, mix until smooth.
- Step 4: After the pumpkin bars are completely cool, they are ready to be iced.
Hint: If you prefer, you can use a baking pan to make these wonderful pumpkin bars.
While the bars were cooling, I did not remove them from the pan. Another option is to place them on a cooling rack.
Variations
There are some different ingredients that you may want to add or change out for this recipe.
- Oil - in place of extra virgin olive oil, you could use vegetable oil instead.
- Spices - you could add ground cinnamon and nutmeg to your pumpkin bar mix if you would like.

Storage
