- powdered sugar
- sugar
- unsalted butter
- all-purpose flour
- vanilla extract
- milk

Instructions to make snowball cupcakes with buttercream icing.
- Step 1: Combine sugar, Β½ cup of softened unsalted butter, the flour, vanilla extract, Β½ cup milk, salt, baking powder and eggs. Using a hand mixer on medium speed, mix until cupcake batter is smooth. Then fill each cupcake liner with Β½ cup of mixture.
- Step 2: In a 350-degree preheated oven, bake cupcakes for about thirteen minutes. Remove from oven and for best results, check for doneness. You can do this by inserting a toothpick or fork into the center of the cupcakes. When it comes out clean, it is ready. Allow to cool completely on a wire rack.
- Step 3: Combine the powdered sugar, Β½ cup of melted butter, and ΒΌ cup milk. Using a hand mixer on low speed, mix until all is completely blended. Refrigerate for one hour to make it firm.
- Step 4: With a butter knife, spread a thin layer of icing onto each cupcake. With a small cookie dough scoop or a larger ice cream scoop, scoop out icing. Place the balls of icing onto the thin layer of icing. Another option is using a piping bag to add the snowballs with.
Hint: Depending on the size of scoop and how many snowballs you add, will determine if you need to make more icing. And you do not have to add equal portions of icing on each cupcake. You can create them however you would like.
Substitutions
- Brown sugar - Although I have not done so, you may want to try it out. Instead of white sugar you may want to substitute with brown sugar.
- Vanilla frosting or vanilla buttercreamΒ - You may prefer a vanilla topping.
- Chocolate cupcakes - You could make chocolate cupcakes or have a chocolate cake centerΒ and add the snowball icing on top.Β
Variations
- Shredded coconut/coconut flakes - make coconut snowball cupcakes by springling shredded coconut or coconut flakes on top of the icing.
- Marshmallow fluff - you may want to add scoops of marshmallow fluff for the snowballs.
