This is a perfect cupcake recipe to make and enjoy during the winter months. Perhaps during the holiday season. The white frosting stacked high like snowballs on the tops of the cupcakes are great too on snowy days.

Equipment

  • 6 cupcake liners
  • 1 butter knife
  • 1 small cookie dough scoop
  • 1 ice cream scoop optional
  • 1 piping bag optional
  • 1 6 muffin cups pan
  • 1 hand mixer
  • 1 small bowl
  • 1 medium bowl
  • 1 Wire rack
  • 1 Airtight container

Ingredients
  

  • 1 ½ cups All-purpose flour
  • cup sugar
  • 1.5 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup softened unsalted butter
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup milk

Buttercream icing

  • 2 ½ cups powdered sugar
  • ¼ cup milk
  • ½ cup melted unsalted butter

Instructions
 

  • Combine sugar, ½ cup of softened unsalted butter, the flour, vanilla extract, ½ cup milk, salt, baking powder and eggs.
  • Using a hand mixer on medium speed, mix until cupcake batter is smooth.
  • Then fill each cupcake liner with ½ cup of mixture.
  • In a 350-degree preheated oven, bake cupcakes for about thirteen minutes.
  • Remove from oven and for best results, check for doneness. You can do this by inserting a toothpick or fork into the center of the cupcakes. When it comes out clean, it is ready.
  • Allow to cool completely on a wire rack.
  • Combine the powdered sugar, ½ cup of melted butter, and ¼ cup milk.
  • Using a hand mixer on low speed, mix until all is completely blended. Refrigerate for one hour to make it firm.
  • With a butter knife, spread a thin layer of icing onto each cupcake.
  • With a small cookie dough scoop or a larger ice cream scoop, scoop out icing. Place the balls of icing onto the thin layer of icing. Another option is using a piping bag to add the snowballs with.

Notes

Hint: Depending on the size of scoop and how many snowballs you add, will determine if you need to make more icing. And you do not have to add equal portions of icing on each cupcake. You can create them however you would like.

Storage

Store any leftover cupcakes in an airtight container for up to three days in the refrigerator.
