- White onion
- Salt
- Black pepper
- Garlic salt
- Mayonnaise
- Dijon mustard

- Plain Greek yogurt

Simple steps to make this gluten free chicken salad recipe!
- Pour one cup of gluten free chicken broth in bottom of crockpot.
- Add a pinch of black pepper and salt, and ⅛ teaspoon garlic salt and mix well.
- Place boneless skinless chicken breasts into crockpot and cover with ½ cup of remaining gluten free chicken broth.
- Place lid on and cook on low for approximately five hours. Or until chicken is cooked through and no longer pink.
- In a large bowl, mix chopped white onion, salt, black pepper, mayonnaise and Dijon mustard together well.
- After chicken has cooled, shred or cut into cubes.
- Mix the sauce and chicken all together.

When I make this easy chicken salad recipe from scratch, I use a covered lid while cooking it. Whether in the oven or on the stovetop, it can help to decrease the amount of cooking time.
- I also at times need to add more water to the skillet as it is not always enough. You want to be sure to keep a close eye on your chicken as you cook it. Making sure it does not overcook and become tough in texture.
- To help chicken breast cook faster, try cutting them into thin slices.
- If you would like, you could add some crunchy veggies to your recipe such as celery pieces.
- Once your sauce is made, if you would prefer less mayo, adding a bit of fresh lemon juice may help.
