There are many different ingredients that can be used to make Caribbean rice. That is one of the great things about it. There is not one set way to make it. The following are what I use to make it and some additional options to consider.
Ingredients
- Cooked rice-I used white rice.
- Salt
- Black pepper
- Chicken breast
- Onion
- Garlic clove
- Olive oil
- Soy sauce
- Pineapple tidbits and the juice

- Sweet pepper-such as green bell pepper and red bell pepper.
- Bean sprouts
- Diced carrots
- Green onions
- Red onion
- Egg
- Frozen peas
- Black beans
- Brown rice

Preparing and baking chicken
The first thing I like to do is to prepare the chicken. That, way, while it is baking, I can prepare the other main ingredients.
- Trim visible fat off of the chicken breast.
- Dice up chicken breast into bite size pieces.
- Season chicken with a pinch of salt and black pepper and mix well.
- In a greased baking pan, place the chicken pieces next to one another.
- Bake until cooked through and there is no pink. Stirring halfway through.
Preparing rice
- I use instant white rice and cook rice in microwave according to instructions on the box. For this recipe I used two cups of uncooked rice and two cups of water.
You may choose to cook your rice on the stove top or in a rice cooker.

- 1 Wooden spoon
- 1 Pair of kitchen sears
- 1 Something to dice onion with
- 1 Grater to mince garlic
- 1 Baking dish
- 1 Bowl
- 1 Tablespoon
- ⅓ Measuring cup
- 1 Cup measuring cup
Ingredients
- 2 boneless, skinless chicken breast
- 1 pinch salt
- 1 pinch black pepper
- ½ tablespoon olive oil to grease baking dish.
- 2 cups white or brown rice. I used white instant rice.
- 2 cups water
- 1 tbs olive oil
- 1 tablespoon soy sauce
- ¼ cup diced onion
- 1 garlic clove
- 1 can pineapple tidbits-optional
- ⅓ cup pineapple juice from canned pineapple tidbits
Instructions
