Ingredients

boneless, skinless chicken breast

to grease baking dish.

white or brown rice.
I used white instant rice.

soy sauce

diced onion

garlic clove

pineapple tidbits-optional

pineapple juice from canned pineapple tidbits
Instructions
Trim visible fat off of the chicken breast.
Dice up chicken breast into bite size pieces.
Season chicken with a pinch of salt and black pepper and mix well.
In a greased baking pan, place the chicken pieces next to one another.
Bake at 350 degrees until cooked through and there is no pink. Stirring halfway through.
I used instant white rice and cooked the rice in the microwave according to instructions on the box.
In a skillet over medium heat, warm up the olive oil, garlic and onion until caramelized. Frequently giving it a good stir.
Add the soy sauce and pineapple juice and stir. Bring to a boil, then turn off heat and remove from it.
Toss all ingredients together in a bowl.
Notes
For best results, I made the rice a day before I used it for this recipe. This helped to prevent excess moisture helping the rice to not be mushy.
