The Best Caribbean Fried Rice Recipe with Chicken!

Equipment

  • 1 Skillet
  • 1 Wooden spoon
  • 1 Pair of kitchen sears
  • 1 Something to dice onion with
  • 1 Grater to mince garlic
  • 1 Baking dish
  • 1 Bowl
  • 1 Tablespoon
  • ⅓ Measuring cup
  • 1 Cup measuring cup

Ingredients
  

  • 2 boneless, skinless chicken breast
  • 1 pinch salt
  • 1 pinch black pepper
  • ½ tablespoon olive oil to grease baking dish.
  • 2 cups white or brown rice. I used white instant rice.
  • 2 cups water
  • 1 tbs olive oil
  • 1 tablespoon soy sauce
  • ¼ cup diced onion
  • 1 garlic clove
  • 1 can pineapple tidbits-optional
  • cup pineapple juice from canned pineapple tidbits

Instructions
 

  • Trim visible fat off of the chicken breast.
  • Dice up chicken breast into bite size pieces.
  • Season chicken with a pinch of salt and black pepper and mix well.
  • In a greased baking pan, place the chicken pieces next to one another.
  • Bake at 350 degrees until cooked through and there is no pink. Stirring halfway through.
  • I used instant white rice and cooked the rice in the microwave according to instructions on the box.
  • In a skillet over medium heat, warm up the olive oil, garlic and onion until caramelized. Frequently giving it a good stir.
  • Add the soy sauce and pineapple juice and stir. Bring to a boil, then turn off heat and remove from it.
  • Toss all ingredients together in a bowl.

Notes

For best results, I made the rice a day before I used it for this recipe. This helped to prevent excess moisture helping the rice to not be mushy.
