This beautiful yellow cake can be served at Thanksgiving and Christmas time. It could be served as a birthday cake or any special occasions. This buttery spongy cake could even be for an after-meal dessert. It's the type of cake that does not have to be served only at a special event.
This soft cake is moist yet can be crispy on the top. It reminds me a little bit of a pound cake. My first attempt at making this cake, I knew I had to make it again and again. It has been a hit.

- Spoon or rubber spatula
- Electric hand mixer
- 8x8 inch pan
- Wire rack
- Airtight container
How to make this easy and fluffy style Guyanese sponge cake Recipe!
- Preheat oven to 350 degrees.
- Grease an 8x8 inch pan with vegetable oil or olive oil.
- In a large bowl, combine two sticks room temperature unsalted butter and two cups of sugar.
- With an electric hand mixer at medium speed, mix the batter for about two to three minutes. Mix until well combined and there are no lumps, making stiff peaks.

- Then, mix in four eggs and one half a cup of warm water. Continue to blend well.
- Add in two cups of All-purpose flour, one tablespoon baking powder and one-half teaspoon vanilla extract. Blend well.
- Pour all of the cake batter into a greased 8x8 inch pan.
- With a spoon or a rubber spatula, smooth batter evenly.
- Put your pan into the preheated oven for approximately forty minutes. Checking it every ten minutes or so.
- When completed baking, let cake set in pan for ten minutes out of the oven.
- Then transfer it carefully onto a wire rack to finish cooling.
- Cut into individual pieces and store in an airtight container.
Added Tips
- This Guyanese cuisine is a yellow cake that can be made to have different colors as well. Just add 3-5 drops of food coloring of your choice to the mixture, stirring well.
- Although it took me forty minutes to bake this delicious cake, it may vary.
- Rather than opening and closing the oven door to check on your cake, perhaps turn on your oven light. This may help prevent the center of the cake from falling when not opening it several times.
- When serving this special cake, you could top it with fresh fruit, ice cream or whipped cream. Do you love chocolate? You may want to try drizzling some chocolate ganache over it. Or enjoy it simply by itself.
