I am not a fan of overpowering seasoning or a lot of vegetables in mine. Although in this recipe, you can add or decrease the listed ingredients that you would like. I am sharing with you my recipe for easy and budget friendly homemade chicken noodle soup.
Typically, I enjoy making soup during the colder months. But this recipe can be made and enjoyed any time of the year. Whether you plan on an evening in or need to be out of the house after dinner for an activity, this recipe can be made in not very much time at all.
Easy steps to make frugal, homemade chicken noodle soup!
What helps to make this recipe so budget friendly is that there are not a lot of ingredients required to make it. Also, some of the items you may find that you already have on hand at home.
Ingredients
- 2 tablespoon olive oil
- ⅓ cup diced onion
- 2 minced garlic cloves
- 4 small carrots shredded
- ⅛ teaspoon salt
- 1 teaspoon pepper
- ½ teaspoon dried oregano
- 1 large cooked and shredded boneless skinless chicken breast (1.5 cups)
- 12 ounces wide noodles
- 70 ounces of chicken broth.
- 1 can of water
Instructions
- Preheat oven to 350 degrees
- Place one tablespoon of olive oil and boneless skinless chicken breast into a baking dish
- Bake in oven until cooked through and no longer pink
- Place one tablespoon olive oil, the onion, garlic and carrots into a soup pot and sauté until vegetables are soft. Stirring occasionally.
- Add chicken broth, water, salt, pepper and oregano and bring to a boil.
- Add noodles and boil for approximately 15 minutes.
- When chicken is done baking, dice or shred it.
- Add chicken and boil for approximately an additional 5 minutes.
- Once cooled, taste to see if you would like to add anymore of the ingredients.
- Determine if you like the consistency of the soup. Add more chicken broth or water if you would like it to be soupier.
Sides
This dish can be enjoyed by itself or with a side.
- Mashed potatoes-your soup could even be placed over it if you would like.
