Directions to make this Easy Gluten Free Couscous Recipe with Cornmeal!

  • Measure out one cup of yellow cornmeal and two tablespoons of extra virgin olive oil.
  • In a large bowl, mix them well to help separate the grains.
  • Pour the mixture and one and a half cups of water into a saucepan, bringing to a low boil over medium heat. Stir to help prevent sticking to saucepan.
  • Turn down heat to simmer and cover for approximately twelve minutes.
  • Then turn heat up to low for ten minutes. You will want the texture to be dry on the outer surface.
  • Turn off heat and remove saucepan uncovering it. Let cool.
  • In a food processor, pulse until couscous is fluffy in appearance.
  • Serve and enjoy by itself or top with fresh herbs like fresh parsley.
