In a large mixing bowl, combine all ingredients together, stirring with a whisk in a circular motion. Making sure to not over stir making the pancake batter runny.
Spray skillet with olive oil cooking spray. I use a non-stick skillet.
Using a ⅓ cup of the batter, equally pour batter into skillet. Cook over medium heat.
Let cook until bubbling, approximately one and a half to two minutes.
With a spatula, gently scoop up each pancake and flip over. Note- if pancake is sticking to skillet, allow to cook just a bit longer. The second side will not take as long to cook. It may take about one minute.
Continue until all of the pancake batter is used up.
