Equipment

  • 1 Large mixing bowl
  • 1 non-stick skillet or frying pan.
  • ¼ Measuring cup
  • ⅓ Measuring cup
  • 1 Cup
  • 1 Whisk
  • 1 spatula
  • 1 Airtight container or freezer bag

Ingredients
  

  • 1 spray olive oil cooking spray
  • 2 cups All-purpose flour
  • 2 tablespoon baking powder
  • ¼ cup sugar
  • 2 cups milk
  • 2 medium whole eggs
  • cup vegetable oil

Instructions
 

  • In a large mixing bowl, combine all ingredients together, stirring with a whisk in a circular motion. Making sure to not over stir making the pancake batter runny.
  • Spray skillet with olive oil cooking spray. I use a non-stick skillet.
  • Using a ⅓ cup of the batter, equally pour batter into skillet. Cook over medium heat.
  • Let cook until bubbling, approximately one and a half to two minutes.
  • With a spatula, gently scoop up each pancake and flip over. Note- if pancake is sticking to skillet, allow to cook just a bit longer. The second side will not take as long to cook. It may take about one minute.
  • Continue until all of the pancake batter is used up.

Notes

This delicious homemade version of McDonalds pancakes makes four servings of three pancakes per serving.
