Equipment

  • 1 Skillet for cooking Italian sausage
  • 1 big pot
  • 1 spoon
  • 1-2 airtight containers

Ingredients
  

  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic minced.
  • ¼ cup diced onion.
  • ½ cup frozen spinach
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 14.5 ounce can diced tomatoes.
  • 3 (2 ounce each) Italian sausages
  • ½ cup uncooked orzo pasta
  • 4 cups chicken broth
  • 1 cup water
  • ¾ cup milk
  • 4 tablespoon butter

Instructions
 

  • In a skillet over medium heat, cook the Italian sausage according to its' package directions. When cooled, dice into small pieces.
  • In a large stock pot, sauté over medium heat the olive oil, minced garlic and onion until soft.
  • Next, add the remaining ingredients except for the Italian sausage and bring to a boil over medium-high heat.
  • Turn down to medium heat and cook for ten minutes.  Don't let it boil anymore. Stir occasionally.
  • Add the Italian sausage and cook on low for another ten minutes, stirring occasionally.
  • Remove from heat and stir.

Notes

Enjoy this delicious soup! If there are any leftovers, store in an airtight container(s) in the refrigerator up to a few days.
