Easy Gluten Free Couscous Recipe with Cornmeal!

Equipment

  • 1 spoon
  • 1 Cup
  • 1 Tbsp
  • 1 Large bowl
  • 1 saucepan with lid
  • 1 food processor

Ingredients
  

  • 1 cup yellow cornmeal
  • 2 tablespoon extra virgin olive oil
  • 1.5 cups water

Instructions
 

  • Measure out one cup of yellow cornmeal and two tablespoons of extra virgin olive oil.
  • In a large bowl, mix them well to help separate the grains.
  • Pour the mixture and one and a half cups of water into a saucepan, bringing to a low boil over medium heat. Stir to help prevent sticking to saucepan.
  • Turn down heat to simmer and cover for approximately twelve minutes.
  • Then turn heat up to low for ten minutes. You will want the texture to be dry on the outer surface.
  • Turn off heat and remove saucepan uncovering it. Let cool.
  • In a food processor, pulse until couscous is fluffy in appearance.
  • Serve and enjoy!

Notes

This delicious gluten free couscous recipe can be enjoyed on its own. You can garnish it with fresh herbs too.
Store any leftovers in an airtight container and store in the refrigerator for up to a few days.
