This easy and tasty cauliflower turkey bean chili recipe has only seven ingredients in it. And it can be prepared on the stove top in little time.

- 1 cup frozen cauliflower rice
- 1 pound lean ground turkey
- 1 can pinto beans drained 15.5 oz
- ½ cup diced white onion
- 1 can tomato sauce 15 oz
- 3 cups chicken broth
- 2 teaspoon chili powder
On a cutting board, dice onion into fine pieces.
In a large pot, add the diced onion and turkey ground meat. Using a cooking spoon, break the turkey ground meat into small pieces and cook over medium heat. Cook the meat through until there is no pink. Stir often to help it to not burn or stick to pot.
Next, add the rest of the ingredients, cauliflower rice, pinto beans without liquid, tomato sauce, chicken broth and chili powder. Stir well, cover and simmer for thirty minutes stirring halfway.
Remove from heat, let cool and enjoy.
- If you would like the consistency of your chili to be thicker, you can add corn starch to it. It is a good idea to add it in very little at a time to help prevent it from clumping. If it does clump, try using a whisk.
- Store leftovers in an airtight container in the refrigerator up to three days.
- If you would like to freeze it, place in a freezer bag. Make sure all of the air is out of it and freeze up to one month.
