Easy Homemade Cranberry Celebration Salad Recipe

Equipment

  • 1 Medium saucepan
  • 1 Medium mixing bowl
  • 1 Food processor or hand mixer
  • 1 Airtight container

Ingredients
  

Cranberry sauce

  • 1 cup water
  • ¼ cup sugar
  • 8 ounces fresh cranberries

Salad

  • 1 cup mini marshmallows
  • ½ can of pineapple
  • ½ can of juice from the pineapple
  • ¼ cup shredded coconut

Instructions
 

First you will make the cranberry mixture.

  • Rinse off your cranberries under cool running water.
  • In a medium saucepan, heat the water and sugar over medium heat until the water begins to bubble.
  • Allow water to bubble for about five minutes, while stirring occasionally.
  • Add in your cranberries stirring off and on and let boil for five minutes.
  • Then simmer the cranberry mixture until it is the consistency you would like it to be. Stir occasionally. (I simmer mine for about five minutes).
  • Turn off heat and set aside to cool and thicken.

Second you will make the salad.

  • In a medium mixing bowl, combine the pineapple, pineapple juice and shredded coconut.
  • With a food processor or hand mixer, blend the ingredients together well.
  • Pour the pineapple and shredded coconut mixture into the cranberry mixture.
  • Add the mini marshmallows to mixture.
  • Stir well.
  • Serve right away or store in an airtight container in the refrigerator.
