Equipment

  • 1 Large mixing bowl
  • 1 Cookie sheet
  • 1 Electric mixer or hand mixer
  • 1 Cookie scoop optional
  • 1 Rubber spatula
  • 1-2 Cooling rack(s)
  • 1 sheet Parchment paper
  • 1 Airtight container

Ingredients

  • ½ cup partially melted salted butter
  • ¾ cup sugar
  • ½ teaspoon baking powder
  • 1 ½ tablespoon vanilla
  • 1 ⅓ cup All-purpose flour
  • 1 egg

Instructions

  • Before preparing your cookie dough, preheat the oven to 350 degrees. Then line a cookie sheet with parchment paper or you can grease the cookie sheet instead.
  • In a microwave safe bowl, slightly melt the butter. I microwave the butter in intervals of twenty seconds at a time.
  • Mix the egg and vanilla together well.
  • Combine butter with the egg and vanilla mixture and the dry ingredients: sugar, baking powder and all-purpose flour. I use a hand mixer to mix the ingredients well. The consistency is soft and may be crumbly looking.
  • Roll the mixture into eight medium size balls and place onto the parchment paper.
  • Bake at 350 degrees for about thirteen minutes.
  • Remove from oven and let cookies sit on the cookie sheet for about five minutes before placing them onto a cooling rack.
