I wanted to have a non-expensive and easy chicken salad recipe that I could make for any occasion. I am sharing my favorite chicken salad recipe that fits both of these things.

One thing I love about chicken salad is that you do not have to use only one type of chicken. I usually use boneless skinless chicken breast. But you can also use other types such as rotisserie chicken. It is nice to be able to use whatever type I may have on hand at the time I plan on making it. Helping it to be very cost effective. Preventing me from having to make an extra trip to the store and spending more money.

In this recipe a serving size is 1/2 a cup of chicken salad. You could increase it to 3/4 a cup for an even heartier serving.

Tasteful tips

The first time I tried chicken salad with red grapes in it, it became my favorite kind. To me, it gives it a little bit of extra taste and crunch to it.

Also, when it comes to taste, I have found that sometimes the mayonnaise taste can be a little overpowering, taking away from the other ingredient’s taste. If this happens, I add a couple of very small splashes of pickle juice to help decrease some of the extra mayonnaise taste.

  • 8 Chicken breast
  • 3 cups of water-possibly more
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 2-3 tsp fresh squeezed lemon juice
  • Red grapes-cut into quarters-as many as you like

  • Skillet
  • Large bowl
  • Spoon
  • Kitchen scissors
  • 1/8 tsp
  • 1 tsp
  • 1 cup
  • Airtight container

Directions

  1. Place chicken into a skillet.
  2. Add water, salt and pepper to skillet.
  3. Over medium heat cook chicken completely through and there is no pink.
  4. When finished turn off skillet remove chicken and let it cool.
  5. Using kitchen scissors, cut chicken into small pieces.
  6. Add the chicken, mayonnaise, Dijon mustard, lemon juice and red grapes into a large bowl.
  7. Stir the chicken mixture well with a spoon.
  8. Refrigerate in an airtight container until ready to serve.

Added notes

When I make this easy chicken salad recipe from scratch, I use a covered lid while cooking it. It helps to decrease the amount of cooking time.

I also at times need to add more water to the skillet as it is not always enough. Be sure to keep a close eye on your chicken as you cook it. Making sure it does not overcook and become tough in texture.

This is a great recipe to have the next day for lunch or dinner also.
